Basic Cooking Information:

Our products are amongst the leanest available. Please keep this in mind when you prepare our products. Our sausages will generally require some oil, water or non-stick spray in the pan as they are so lean. On the grill they should not be overcooked (160 degrees internal temperature is sufficient).

Recipes:

Baked Ziti with Italian Sausage
A chunky marinara sauce, Italian sausage and mushrooms make the perfect combination with pasta and fennel seeds. A crisp green salad, garlic bread and iced tea round out a savory Italian-style dish!
8 ounces dry ziti pasta, cooked, drained and kept warm
2 teaspoons olive oil
12 ounces Andy's Italian sausage links, casings removed
6 ounces mushrooms, sliced
2 (15-ounce) cans Marinara Sauce
1 1/2 cups shredded mozzarella cheese, (6 ounces)
2 tablespoons shredded Parmesan or Romano cheese
1. PREHEAT oven to 400° F (205°C). Grease 13 x 9-inch baking dish.
2. HEAT olive oil in large saucepan. Add sausage; cook, stirring frequently, until no longer pink. Drain. Add mushrooms and fennel; cook, stirring frequently, until mushrooms are tender. Add sauce; cook, stirring occasionally, until heated through. Remove from heat.
3. ADD pasta to sauce mixture; toss well to coat. Spoon into prepared baking dish; sprinkle evenly with mozzarella and Parmesan cheese.
4. BAKE for 15 to 17 minutes or until cheese is bubbly. Cool for 5 minutes before serving.
Makes 4 servings.

Bow Ties with Sausage and Sweet Peppers
Gather any late-season sweet peppers from your garden or the farmer's market for this spicy dish
8 ounces dried bow-tie pasta
3/4 pound Andy's fresh hot Italian sausage links
2 medium red or green sweet peppers, cut into 3/4-inch pieces
1/2 cup vegetable broth or beef broth
1/4 teaspoon coarsely ground black pepper
1/4 cup snipped fresh parsley
1. Cook pasta according to package directions. Meanwhile, cut the sausage into 1-inch pieces. In a large skillet, cook sausage and sweet peppers over medium-high heat until sausage is brown. Drain off fat.
2. Add broth and black pepper to skillet. Bring to boiling; reduce heat and simmer, uncovered, for 5 minutes. Remove from heat. When pasta is cooked, drain well. Toss pasta with sausage mixture and snipped parsley.
Makes 4 servings.
